1 tsp Coconut Oil
1⅔ cups 1 tsp Coconut Milk, canned

Preparation

  1. Serving size:
    9.80 oz (calculated)
    Notes: as a side; as a main factor in 1.5 servings per person (to fill a soup plate)

    Marinating the chicken

  1. Cut the chicken into bite-sized strips and chop the garlic.
  2. Mix the orange juice and soy sauce and marinate the chicken with the garlic in the fridge. For extra tender meat, marinate for at least 2 hours or even overnight.
  3. Cooking the dish

  4. Drain the meat, setting the marinade aside for later.
  5. Chop the onion, bell pepper and chili pepper. If you like it spicy, include (some of) the seeds from the chili pepper. Else discard them.
  6. Lightly roast the spices in a pan to intensify their flavor. Make sure not to burn them.
  7. Add the coconut oil and saute the onions for a couple of minutes.
  8. Add the meat and let it brown slightly.
  9. Add the bell pepper, chili pepper, marinade and coconut milk.
  10. Bring to a boil, then turn down the heat and let simmer until the meat is cooked.
  11. Serve as is, with rice or with bread for dunking.

  13. You can store the dish in an airtight container for 3 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or on the stovetop.
