Preparation
- Serving size:9.80 oz (calculated)Notes: as a side; as a main factor in 1.5 servings per person (to fill a soup plate)
- Cut the chicken into bite-sized strips and chop the garlic.
- Mix the orange juice and soy sauce and marinate the chicken with the garlic in the fridge. For extra tender meat, marinate for at least 2 hours or even overnight.
- Drain the meat, setting the marinade aside for later.
- Chop the onion, bell pepper and chili pepper. If you like it spicy, include (some of) the seeds from the chili pepper. Else discard them.
- Lightly roast the spices in a pan to intensify their flavor. Make sure not to burn them.
- Add the coconut oil and saute the onions for a couple of minutes.
- Add the meat and let it brown slightly.
- Add the bell pepper, chili pepper, marinade and coconut milk.
- Bring to a boil, then turn down the heat and let simmer until the meat is cooked.
- Serve as is, with rice or with bread for dunking.
- You can store the dish in an airtight container for 3 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or on the stovetop.
