Preparation
- Serving size:2.45 oz (calculated)Notes: 1 large muffin
- Temperature: 356 °F (preheated, circulating air)
- In a large bowl, whisk together the butter and sugar.
- Add the vanilla extract and eggs and whisk until well combined. Be sure to scrape down the sides and mix again.
- In a separate bowl, mix together the flour, corn starch, cocoa powder, baking powder and salt.
- Sieve about half of the dry ingredients into the wet ingredients and stir until well combined. Sieving will help get rid of clumps in the flour and especially cocoa powder.
- Sieve in the remaining dry ingredients and stir until they are fully incorporated. Do not overmix the batter.
- Finally, stir in the chopped chocolate.
- Line a muffin tin with muffin liners and add the thick batter, about 1/4 cup each.
- You do not need to level the batter, once the muffins are in the oven the batter will spread evenly.
- Bake until done, about 20 to 25 minutes.
