In a large bowl, whisk together the butter and sugar. Add the vanilla extract and eggs and whisk until well combined. Be sure to scrape down the sides and mix again. In a separate bowl, mix together the flour, corn starch, cocoa powder, baking powder and salt. Sieve about half of the dry ingredients into the wet ingredients and stir until well combined. Sieving will help get rid of clumps in the flour and especially cocoa powder. Sieve in the remaining dry ingredients and stir until they are fully incorporated. Do not overmix the batter. Finally, stir in the chopped chocolate. Line a muffin tin with muffin liners and add the thick batter, about 1/4 cup each. You do not need to level the batter, once the muffins are in the oven the batter will spread evenly. Bake until done, about 20 to 25 minutes. Let cool and enjoy!
