Preparation

  1. Serving size:
    1.56 oz (calculated)
    Notes: 1 slice, 3/4 in (1.9 cm) thick if using a 9 in by 5 in loaf pan
  2. Temperature: 350 °F (preheated, circulating air)
  1. In a bowl, whisk together the melted butter and erythritol until smooth.
  2. Add the eggs, sour cream and vanilla extract and continue to whisk until well combined.
  3. In a separate bowl, combine the almond flour, cinnamon, baking soda and baking powder.
  4. Add the dry ingredients to the wet ingredients and stir until fully combined.
  5. Scrape the sticky batter into a loaf pan, for example in a 9 in by 5 in (23 cm by 12.5 cm) pan. Optionally grease the pan, for example with the remainder of the coconut oil after measuring it out. We use a silicone form, which does not have to be greased.
  6. Level the batter, for example with the back of a wet spoon.
  7. Bake until done, about 30 minutes. You can check this by inserting a toothpick into the center. It should come out clean.
  8. Remove from the oven and let cool for a couple of minutes. Then remove the bread from the pan and let it cool completely on a cooling rack.
  9. Once fully cooled, slice and enjoy. We love having it generously spread with butter.

  11. You can slice the bread and then store the loaf in the fridge in an airtight container (for up to 7 days). Or freeze part of the loaf in slices. You can then easily defrost the whole batch, or toast individual slices for breakfast.
