Preparation
- Serving size:5 oz (calculated)Notes: 1 patty, about 1/4 cup; sufficient as a smaller side dish
- Put the cauliflower in a microwave-safe bowl with 2 tablespoons of water and steam for about 15 minutes at 900 Watts. Let cool.
- Grate the zucchini and chop the cauliflower.
- Put both in a dish towel and press out as much liquid as possible.
- Mix the vegetables with the coconut flour, eggs and spices.
- Form patties, measuring about 1/4 cup for each.
- Heat some coconut oil in a pan.
- Fry the patties on medium heat about 3 minutes on each side. If you made thick patties, you may also want to fry the sides.
