3 cups Cauliflower, raw
2  (ea. 6.91 oz) Zucchinis, Courgettes, Summer Squash, raw
¼ cup Coconut Flour, partially de-oiled
2  (ea. 1.76 oz) Egg, large

Preparation

  1. Serving size:
    5 oz (calculated)
    Notes: 1 patty, about 1/4 cup; sufficient as a smaller side dish
  1. Put the cauliflower in a microwave-safe bowl with 2 tablespoons of water and steam for about 15 minutes at 900 Watts. Let cool.
  2. Grate the zucchini and chop the cauliflower.
  3. Put both in a dish towel and press out as much liquid as possible.
  4. Mix the vegetables with the coconut flour, eggs and spices.
  5. Form patties, measuring about 1/4 cup for each.
  6. Heat some coconut oil in a pan.
  7. Fry the patties on medium heat about 3 minutes on each side. If you made thick patties, you may also want to fry the sides.
