If using raw chicken, cook and shred or dice it. You can prepare the remaining ingredients while the chicken is cooking. In a large bowl, mix together the softened cream cheese, cream, parmesan, basil and salt. Stir in the minced garlic, chopped onion, shredded mozzarella and chicken. Mix the cauliflower florets and spinach in the baking dish and then pour in the cheese and chicken mix and stir it all together there. Or, if you have a very large bowl, mix everything together in the bowl and then transfer it to a baking dish. A 9 in by 13 in casserole works well for 6 servings. If you are using frozen spinach that's cubed or loosely packed, there's no need to thaw it. Instead of fresh, you can also use frozen cauliflower, or if you prefer, broccoli. Top with grated mozzarella and parmesan. Bake until the casserole is bubbling and the cheese has melted and browned to your liking, about 40 minutes. Let cool for 5 to 10 minutes, then slice and enjoy! # Meal Prep Tip You can store the dish in an airtight container for 3 days in the fridge or up to 3 months in the freezer. For best results, thaw overnight. Reheat in the microwave or in the oven.
