Preparation

  1. Serving size:
    1.05 oz (calculated)
    Notes: 1 spherical cookie with a diameter of about 1 inch or 2.5 cm
  2. Temperature: 320 °F

    Preparing the dough

  1. Whisk the softened butter with the Xylitol until the mix lightens visibly.
  2. Scrape out the vanilla pulp and add it to the mix. Alternatively, add about 2 tsp of vanilla extract.
  3. Add the egg yolk, salt, almond flour and carob flour.
  4. You will get a crumbly dough. Bring it together with your hands and form a roll.
  5. Wrap in cling film and chill for about 2 hours.
  6. Baking the cookies

  7. Form balls with a diameter of about 1 in or 2.5 cm.
  8. Whisk the egg white until it's starts to bubble.
  9. Roll the dough balls in the egg white, then coat with chopped almonds.
  10. Using the back of a wooden cooking spoon, make an indentation.
  11. Fill the indentation with about 1/4 tsp of jam.
  12. Bake for about 15 minutes.
