In a microwave-safe bowl, mix together the mozzarella and cream cheese. Melt it in the microwave for 30 seconds at 600 W, stir, then microwave another 30 seconds. If the cheese is not fully melted yet, continue with 15-second blasts, stirring in between. Stir in the eggs, then the almond flour, baking powder and salt. Knead until you get a smooth dough, it should come together quickly, about a minute. Divide the dough into the number of servings and form balls. For buns with a diameter of about 3 1/2 in or 9 cm, use about 4 1/2 oz (130 g) of dough (1 serving). You can of course form more, smaller buns instead. Line a baking tray with parchment paper. Transfer the shaped dough, pressing them flat. You should get a raw bun with a diameter of about 3 3/8 in or 8.5 cm and a thickness of about 1 in or 2.5 cm . Brush with the melted butter and sprinkle with 1/2 teaspoon of sesame seeds. Bake until golden-brown, about 10 to 12 minutes.
