Sift the flour and mix it with the vanilla sugar, salt and milk until smooth. Add the egg yolks to the dough. In a separate bowl, beat the egg whites with about 2/3 of the sugar until stiff. Fold the egg whites into the dough. Heat the butter in an oven-proof pan. Add the dough to the pan and bake for 15 minutes in the oven. Quarter the dough, flip it and bake for another 10 minutes. Divide into chunks and top with the remaining sugar. Caramelize the sugar in the oven. Kaiserschmarrn tastes best topped with icing sugar with a side of apple sauce or plum jam. You can of course also enjoy it with a scoop if ice cream. Enjoy a large portion as a sweet main, or a small one as a dessert. Extra tip: If you like raisins, soak some in rum and top the dough with them before putting in the oven.
