Season the pork chops with paprika, salt and pepper from both sides. In a large pan over medium-high heat, heat the oil. Sear the seasoned meat, about 3 minutes on each side depending on the thickness of your chops. Check that the meat is cooked to your liking. Remove from the pan and set aside. Reduce the heat to medium. In the same pan, melt the butter. Add the minced garlic, chopped onion and Italian seasoning. Cook for a minute or so, then add the stock. Bring the stock to a boil, then reduce it for about 5 minutes. Stir in the cream. Add the fresh spinach leaves and cook until they wilt, about 3 minutes. Stir in the parmesan, letting the sauce simmer until the cheese melts through the sauce, about 2 minutes. Season to taste with salt and pepper. If you like it spicy, you can also add red crushed chili pepper. Add the pork chops back into the pan and reheat for about 2 minutes. Serve sprinkled with some freshly chopped parsley. Enjoy by itself or with a side of vegetables or salad! As there's ample sauce, it also goes really well with rice, pasta or potatoes, or - for a low-carb option - cauliflower rice or mash or low-carb noodles. # Meal Prep Tip You can store the dish in an airtight container for 3 days in the fridge or up to 6 months in the freezer. If possible, thaw overnight in the fridge. Reheat in the microwave or on the stovetop.
