Cut 4 slits into each slice of salami, making sure to keep it intact in the center. I used slices with a diameter of about 7 cm (2 3/4 in), stacking them into 3 piles before cutting. Put each slice into a mini muffin tin cup, using the slits to overlap the salami and fit it in nicely. Bake until the slices are slightly crisp, about 10 minutes. Mix together the tomato paste, water, oregano, salt and pepper for a quick and easy pizza sauce. Alternatively, use Marinara sauce (1/4 cup for 24 bites, 1/2 teaspoon per bite). While the bites are in the oven, I also like to divide the grated cheese into 24 portions (for 24 bites), so that each bite gets the same amount of cheese, about 1 tablespoon each. Remove from the oven, add 1/2 tablespoon (3.5 g) of grated cheese to each cup, then 1/2 teaspoon of sauce, then another 1/2 tablespoon (3.5 g) of grated cheese. Optionally add other toppings, such as olives, bell peppers or mushrooms. Broil until the cheese has melted and is golden-brown, about 2 to 3 minutes. Let cool for a couple of minutes before removing from the muffin tin. You can use the excess fat in a different dish (e.g. to fry up some steak) or discard it. Optionally top each bite with some fresh herbs, such as parsley or basil. Enjoy warm or cold, as a starter or snack. It's also a perfect buffet item!
